I just made it again a few minutes ago and this time, in small paper baking cups.<\/p>\n<p>These cups are slightly larger than cupcakes and with straight sides mini panatone cups. It is so easy and quick you will love this.<br \/>\n<strong><a title=\"High School Carrot Cake\" href=\"http:\/\/www.platelunch.net\/recipes\/carrot_cake.pdf\" target=\"_blank\">Download a PDF version<\/a><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>9 X 13 glass baking dish, buttered and dusted with flour<\/li>\n<li>2 cups granulated sugar<\/li>\n<li>3 cups all-purpose flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>3 teaspoons cinnamon<\/li>\n<li>1 cup chopped nuts (pecans or walnuts would be my recommendation)<\/li>\n<li>1 \u00bd cups canola oil<\/li>\n<li>3 eggs slightly beaten<\/li>\n<li>1 cup crushed pineapple with juice<\/li>\n<li>2 cups grated carrots (that\u2019s about 3 \u00bd carrots)<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Set oven to 350 degrees<\/li>\n<li>In a large mixing bowl combine sugar, flour, salt, baking soda, cinnamon and chopped nuts.<\/li>\n<li>Add to the bowl the oil, eggs, pineapple and grated carrots.<\/li>\n<li>Mix completely.<\/li>\n<li>Pour into the baking dish and smooth out.<\/li>\n<li>Bake in the middle of the oven for 45 minutes or until a knife can be inserted into the center and comes out clean. You may have to adjust this to less time based on your location and humidity. I notice when I bake this in smaller dishes or in small paper cups the baking time has to be reduced by about 4 minutes.<\/li>\n<li>Remove from the oven and let cool to room temperature before frosting. I don\u2019t like to put frosting on these.
